Bunny’s Pineapple Flapjacks

If Bunny was the person who sent me an hilarious photo of an exploded bowl of porridge then we can take her at her word that she’s suffered quite a bit on that front. These alternative flapjacks do sound rather nice, though.

“Since I’ve had nothing but disasters with the porridge pancakes (entirely my fault!) we’ve been experimenting. Here’s one for you dairy intolerants!

Stir together one cup of Ready Brek and one cup of pineapple juice until they form a thick paste. Microwave for 90 seconds.

Line a baking tray with greaseproof paper, and pour on the pineapple mixture. Spread it out into a rectangle, about 5mm thick, and score the surface into smaller blocks with the back of a knife. Bake in the oven at 180C for about 20 minutes, then turn off the oven and leave the mix to dry out and cool. Cut along the score lines and voila! Slightly chewy fruity flapjacky things!

Update. She was the person. Get a load of this, folks! Spot the deliberate errors? (Answers below)

    what IS Ready Brek and could I use something else? Its it just a cup of porridge?

      it’s porridge, basically, although from memory i think it’s maybe ground a bit finer? whatever it is, they charge double for it…

    Bunny, you are a genius! This is a beautifully simple recipe and works just fine with regular porridge oats. (Finer oats like ready brek might be better for very small babies who might choke on whole oats.)

    The results are not like Our Earth Flapjacks, being weirdly bendy, but they are tasty and very moreish. I’m now inclined to whip up a batch any time I have the oven on.

    Once baby has a few more teeth flipping the cooked flapjack over and giving it another 15 min makes it crispy on the back too and even more delicious. Also try a variation using apple juice, a teaspoon of cinnamon and 1/4 cup of sultanas. Nom!

    at what age can i start giving these to my lo….shes nearly 8 months is that ok….or is pineapple juice too much?

      why would it be too much, do you think? i can’t think of anything, but then i might have forgotten something. by 8 mos, if i remember correctly, i just gave mine anything. (actually i think that was also around the same time they really started having an opinion about what they liked and didn’t like).

    i just thought it might be too acidy…. my lo will eat pretty much anything but just wanted to make sure before i went ahead but think i’ll give it a go anyway.

      the acidy thing is funny, isn’t it? my eldest still won’t eat raw tomato because she thinks it’s too acidic, but will eat pineapple by the bucket, but my husband says pineapple makes his mouth tingle… i guess you just have to ‘suck it and see’, as they say.

    I am just trying to make these but using porridge oats and apple jiuce. 1 cup of each seems rather runny though has anyone had the same? I have added more oats probably another cup and a half. Hope it works!

      I’ve had the same thing, started putting the cup in and stopped as it was getting too runny. Drank the rest & added a bit more oats. I’d prob say 1/2 cup apple juice to 1 cup oats

    Just made these and thought I had gone wrong but they peeled off the paper easily… just look bit funny… just about to get the little one to taste test them!!

      i wonder if flapjacks that are unnappealing to parents but that delight children are the ideal baked good? *scoffs leftover birthday cake*

    YOU SHOULD NOT GIVE PINEAPPLE TO A CHILD UNDER 1, IT CAN CAUSE SEVERE RASH , GOOGLE IT FOR MORE INFO

      i have googled it, i can’t see anything that says that pineapple is to be avoided by children under the age of one, indeed, a lot of commercial baby foods seem to use pineapple as a sweetener. if you just mean that some people find that it tingles/nips their tongue and that they don’t like it for that reason, remember that a BLW child will be able to stop eating it and refuse more. can you supply further details, please?

    Just made these. Total hit with my 7 month old. The other half even pinched some (although he claimed to not like the texture).
