Bat's Sweetcorn Patties

Now I hope Bat won’t be offended if I express some hesitation about the salsa… Babybear is fairly adventurous but I just can’t see a baby eating it. I will be happy to stand corrected, though, as it sounds absolutely lovely to this grown-up.

The patties sound cracking, though, don’t they?

“I have just made these and they are yum. I’m taking them on a picnic, porridge pancake style, and am quite pleased with myself. You can miss out the salsa if you are not up to avocado-in-baby’s-ears-situation today.

525g sweetcorn kernels, tinned or cut from cob (3 cobs)
1 red onion, chopped
2 eggs
half bunch of coriander
125g plain flour
1 teaspoon baking powder

1.Place 2/3 of the sweetcorn and all other ingredients in food processor and blitz. Stir in the rest of the corn.
2. Heat a tablespoon of oil in frying pan and heat to medium-high heat.
3. Drop 2 tablespoons of mixture per cake into pan, cooking 3 at a time. Cook for 1 minute each side, or until golden.

Avocado salsa:
2 avocadoes, diced
half bunch of coriander
2 tablespoons lime or lemon juice
2 tablespoons chopped spring onions

1. Mix all salsa ingredients together!”

    Just made an adapted version, not enough sweetcorn so I threw in a tin of kidney beans and some mushrooms. 7 month old enjoyed 2 patties with some cream cheese spread on top and I ate about 6 of them dipped in garlic butter! Fab recipe!

    Hi there – these sound great and I’d love to make them for my little monkey. He seems to have a reaction to egg so do you know of a way to make them bind without the eggs?

      bananas can be used as a binding agent in place of eggs – not sure how it would affect the taste but you could try

        I was vegan pre-baby and bought some ground flax/ linseed which you can apparently use to bind like egg in cakes so might work here? I never tried it, it’s probably v out of date in my cupboard now! I got it at holland and barrett.

    would it be completely bonkers to make his using banana as a binder? i know that’s what people use when making sweet pancakes, and there really are just pancakes with corn in…

    Really easy to make and enjoyed by my daughter of 10 months. This recipe made about 14 fritters, depending on the size of your dollops.

    Do you think I coul cook these in the oven? I’m not fond of frying…

      i’d say not, however the mixture is not unlike a pancake (drop scone) batter so if you do them in the oven then go for it. but if i recall correctly you don’t need very much oil, better to wipe a non-stick frying pan with some kitchen roll and oil than have a puddle of it.

    These patties are great. Made them tonight – ish.

    But I didn’t have enough sweetcorn so I used half peas for the whizzed up bit. I also didn’t have a red onion so I used a grated carrot. Oh, and I didn’t have coriander so I used spinach.

    I also added oregano and black peper to the mix, which made a big difference.

    Had these mid week and found them incredibly tasty. The avocado wakes was so simple to put together. We also had a selection of dipping sauces with them.

    I have an American doughnut maker (it makes doughnut balls) and it baked them beautifully. Yummy!

    Hi, can these be frozen once cooked?

      I can’t see why not, but i wouldn’t colour them too much. a pale batch for the freezer would be warmable in the oven, i would assume. do report back if you try it?

        Hi, will give these a go today…when you say colour, do you mean as in ‘browning’ the patties when coooking. So on reheat they don’t burn? It’s just that the recipe makes so many that last time i ended up eating the left overs and baby didn’t actually get to eat that many!!

    I made these today and they tasted so yummy! My twin girls haven’t had some yet but as for me, they are certainly a winner. I added some grated cheddar cheese which also tasted good. Thanks for the great recipe!

    Woa! A revelation in food…My nearly seven month old has assumed a closed mouth position when purees approach on spoon…he does however love to hold things and put them in his mouth! Heard about baby led weaning, went on the site today, saw this recipe and thought it sounded lovely! Had all the ingredients (not the full amount of sweetcorn but used lots of onion which gives them a sweetness when cooked and added basil along with coriander) they taste fab!!

    Yowser! These are delicious. I made a few changes Рsaut̩ed the onion. Used parsley and added carrot and zucchini. Any way to sneak in veggies hey! Thanks clever baby led weaning mummas :)

    I made these tonight and while the taste was fine I found them to be a bit doughy/soggy. I did half the mixture as it seemed like it would make a huge amount of them so don’t know if that was the problem but I cooked them a lot longer than it said just to be sure but they were still soggy. Any ideas?

      you deffo remembered to put the baking powder in? other than that, i’m wondering if the pan wasn’t quite hot enough?
