Minimoo's favourite spinach-y beanburgers

“I thought I’d send this recipe as minimoo has been devouring these beanburgers for a while.

Ingredients
1 tablespoon oil
1 onion
2 garlic cloves
1 small chilli (I didn’t add this)
100g frozen chopped spinach, thawed (Didn’t have any frozen so I used half a bag of spinach)
400g can cannellini beans
50g breadcrumbs
1 teaspoon ground cumin
1 tablespoon ground coriander

Heat the oil and cook onion and garlic (and chilli if you’re brave) for 5 mins until softened. Meanwhile cook spinach in a pan with a little water if it’s not frozen. Squeeze excess moisture out of the spinach.

Mash beans well and mix with spinach, breadcrumbs, cumin and coriander. Add the onion mixture and stir well.

Think I got about 8-10 burgers from this. Minimoo loves them.”

    Do you cook the beans first? Once the burgers are into patties, do you oven cook or put them in the pan? sorry if I am being thick, it has been a long day!!

    no cooking, they should be quite mashable from the can. (in fact it was not unknown for my two to feast on rinsed borlotti beans straight from the can when they were little). then i’d stick them into a frying pan, personally. i liked these with the chilli and a squeeze of lemon and some sea salt over them. kids liked them a bit plainer, so i’d only put the chilli in half the mix. hope you enjoy them!

    Hi, great recipe! My munchkin loves spinach! Does anyone know if these would freeze ok?

    Ive made about 3 batches of these so far; they are yum!
    I pan fry in a tiny amount of olive oil, leave to cool and then freeze wrapped in grease proof/in a Tupperware. I then take one out either the night before or first thing in the morning to defrost then either feed at room temp or microwave for about 10 seconds. Enjoy!
