Fiona’s Vegetable Nuggets

Freezable, chaps, and quick. Two major pluses in my book.

“Cheesy Vegetable Nuggets

8oz frozen broccoli florets
4oz breadcrumbs
6oz Cheddar, grated
2 1/2 tbsp water
2 1/2 tbsp olive oil
1 1/2 tsp baking powder

Heat the oven to 375 deg F, 190 deg C.
Cook the broccoli, then drain and chop well.
Combine with the remaining ingredients and mix well.
Form the mixture into nugget shapes and place on a greased baking tray, about 3in apart.
Bake for 20-25 mins, turning halfway through the cooking time.
Serve warm.

I tend to make them with frozen mixed veg rather than just broccoli. They do spread out when cooking, I’ve found that making little balls and cooking in mini-muffin tray works well. Warning, they are really moreish and I’m sure I eat more than she does!”

      aha! I will see if someone knows on the forum, i don’t think i ever froze them myself. (not that i am Fiona, i am Aitch). they are tasty, though, i do remember that.

    I’ve made these lots of times and often freeze them. I freeze after cooking and then just heat up in the oven once defrosted (they do go a bit soft once defrosted but perk up in the oven). You can probably stick them straight in the oven to warm from frozen too…

    Yum yum yum! I used half Emmental and half red leicester and mixed frozen veg…not sure if Jude will like them as they took quite a while to prepare and he’s in bed now but I approve :)

    Hi there, we are a vegan family and I made these for my 8 month old using soya cheese which seemed to work quite well and were quite tasty too!

    He is advised not to have soya either because of the estrogen (can’t spell it!) levels in it… So no yogurt for him either : / was wondering if u could make then with the cheese maybe? Use an egg to bind it?

    Do you have any estimate for how those weights translate into cups? I don’t have a scale to weigh out food in oz.

    Have just made these with leftover roasted sweet potato and they’re delicious! Made them in mini muffin tin – turned first batch out half way through so could turn over but there was no need to – second batch stayed in tin and were fine.

    I make about 12 larger size nuggets in a muffin tin, and use finely chopped peppers and onion instead of broccoli. I fry them in a little butter then leave to cool before mixing with everything else, and they’re AWESOME! Baby loves them!

    I made these with chicken and carrot and turnip, rolled into a large ball and flattened on to a baking tray then brushed with olive oil and covered in breadcrumbs front and back- ooked for 25 mins, and cut into wedges that the whole family eat
