Post them up and every so often I'll snaffle them and put them on the blog, if that's okay? It'll save you the trouble of emailing them to me. (It will mean you lose out on our charming personal interaction but I sense you can live with that.)

Does anyone have any nice veggie burger recipes? I'm trying really hard to be more healthy in my eating habits so I need something I can make in a big batch and freeze so that on lazy days I can just drag one out rather than resorting to cr@p.

I really like these. They are filling too which helps me not snack in the evening. I serve them in pitta with salad, yummy!

Yes I've frozen them. I made some into smaller ones so I could get them out for lunch time. I cooked them before freezing though.

I tried a recipe for halloumi burgers last night which was delicious but lacking in structural integrity. It was dead easy - just coarsely grate 200g of halloumi, a small courgette and a large carrot, and mix, with some chopped mint for seasoning. I added a beaten egg to try and make it stick together, but it was still very loose. In hindsight it would have been better to use gram flour instead of egg. Dry fry in a non-stick pan.

Veggie Burgers
Ingredients:

* 1 cup canned black beans
* 1 carrot, grated
* 1/2 onion, diced
* 3 potatoes, grated
* 4 scallions, chopped
* 1 cup corn
* salt and pepper to taste
* oil for frying
Preparation:
Mash the beans with a fork or a potato masher. Add the remaining ingredients, except the oil and mix until well combined.

Shape the mixture into patties. Heat about two tablespoons of olive oil and cook each patty until the veggie burgers are done, about 3 minutes on each side.
