Gluten free sweet treats

Post them up and every so often I'll snaffle them and put them on the blog, if that's okay? It'll save you the trouble of emailing them to me. (It will mean you lose out on our charming personal interaction but I sense you can live with that.)

Has anyone got any tried and tested recipes for gluten free cakes / biscuits / similar?

I need to make them dairy free too, but that's usually the easy bit!

My best mate is gluten intolerant so I regularly make gf goodies...

Jamie Oliver's gf carrot cake is delicious.

I started my gluten & dairy free adventure with a recipe I sort of made up (it's a bit of an amalgamation of several others). Gluten free, dairy free blondies. Most definitely not fat, sugar or salt free...

4 eggs
225g cheap sweetened crunchy peanut butter
150g caster sugar
100g stork
1tsp vanilla extract
1tsp baking powder (check gluten free) (not sure if this did anything, but hey)
100g dairy-free chocolate (I used white), roughly chopped
25g roasted salted peanuts, roughly chopped

- Preheat oven to 180 degrees. Line a Swiss roll tin with baking parchment.
- Separate the eggs. Whisk the whites to stiff peaks.
- Beat the peanut butter, egg yolks, sugar, vanilla extract until it goes pale (10 mins with K-beater)
- Fold the egg whites, peanut butter mixture, baking powder and chocolate together.
- Spread in the tin and sprinkle with chopped nuts.
- Bake until done to your liking - 30 mins left it lovely and squishy in the middle but crunchy at the edges.

So, these peanut butter blondies are REALLY good straight out of the freezer. Don't ask me how I know this :D

Yeah. They've got so much fat and sugar in, they sort of end up like peanut ice cream with structure, if that makes sense.

Obviously I knew that before I ate a frozen one.

Made these for Izbiz but he only got about two of them...

Blitz about 8 or 10 large dates and a handful of almonds (or other nuts) in the blender until the texture resembles dough. Mix in a small handful of cocoa nibs; you can use chocolate chips instead, but honestly the recipe doesn't need any extra sweetness, and the nibs don't taste bitter at all. Form into balls - this is easier with cold or slightly oiled hands. Yum.
