I started my gluten & dairy free adventure with a recipe I sort of made up (it's a bit of an amalgamation of several others). Gluten free, dairy free blondies. Most definitely not fat, sugar or salt free...
4 eggs
225g cheap sweetened crunchy peanut butter
150g caster sugar
100g stork
1tsp vanilla extract
1tsp baking powder (check gluten free) (not sure if this did anything, but hey)
100g dairy-free chocolate (I used white), roughly chopped
25g roasted salted peanuts, roughly chopped
- Preheat oven to 180 degrees. Line a Swiss roll tin with baking parchment.
- Separate the eggs. Whisk the whites to stiff peaks.
- Beat the peanut butter, egg yolks, sugar, vanilla extract until it goes pale (10 mins with K-beater)
- Fold the egg whites, peanut butter mixture, baking powder and chocolate together.
- Spread in the tin and sprinkle with chopped nuts.
- Bake until done to your liking - 30 mins left it lovely and squishy in the middle but crunchy at the edges.
