When can we give all foods without worrying?

Hi, my baby is almost 6 months old so we're preparing to wean! I've read a book on baby led and think it sounds great. It says to start off by cutting things into shapes they can hold easily, but doesn't say how long to expect that stage to last? When can I give him food as we would have it - so chopped normally into a tomato sauce for instance? How will I know he's ready for that? My main concern is choking, I'm very nervous of that. A normal meal might contain various things that I feel could be easily choked on - whole beans for instance, a prawn, a chickpea, a pasta shell or anything you might normally cut into cubes. So when do you move from the "cut veg into long sticks" stage and into the "give them everything as you eat it" stage? Or is there another stage in between where you give them everything in a slightly less "stick" fashion but still avoid any pieces being too small?
