Lunch inspiration

Hello, hello!

We are just back from a week in Copenhagen which was fantastic despite M taking her 2yo stubbornness to a whole new level. Daily and repeatedly. Hope I've not missed too much here!!

What do you guys do for an easy, healthy lunch?. I really struggle with lunch ideas and far too often do cheese and carrot toasties/sandwiches/quesadillas. Hummus is never that well received annoyingly. Pizza and tuna pasta are my other go-to lunches.

Hit me with ideas please!

The joys of 2-ness!

Moo gets anxious if I suggest something not closely resembling a sandwich for lunch so not much help. Dippy eggs? Scrambled eggs? Both toast related! I make savoury pancakes, Moo says Mmm pancakes then says no thank you, E sometimes eats them, sometimes they hit the floor. Not sure why I bother actually!

Tuna or egg salad sandwiches
Dhal with naan bread
Hot dogs and veggie sticks
Canned soup and crackers
Pierogies
Chili and tortilla chips
Mac n cheese

I made pancakes today - the spinach has taken over the garden in our absence so I threw a handful into my usual banana cinnamon batter. It was delicious and the girls were quite taken with green pancakes. Had them with crunchy almond butter which was great.

StJ, I always fail at mac and cheese but you reminded me of a great Mac and peas recipe I'd forgotten about.

Off to Google pierogies...

I don't know that I am one to talk about healthy lunches given that we have just had pancakes with strawberries, Nutella, marshmallows and ice cream :D but we tend to have:

- dhal
- quesadillas
- fruit/yoghurt pizza
- jacket potatoes
- soup
- tapas stuff - homemade croquettes with ham, Spanish meatballs, bruschetta etc

Lots of the above but also...
'Dippy' with breadsticks, carrot and cucumber sticks (C is a big cucumber fan!)
Savoury muffins (with grated carrot & courgette, feta, pine nuts)
Pitta pockets with ham and cheese or hardboiled egg and cucumber
Veggie soup and bread roll
Crumpet with Marmite and cheese
Chicken drumsticks with cherry tomatoes and cucumber sticks
Veg omelette/quiche
Baked beans!
I often dish up leftovers from the night before for lunch.

Brilliant. Thank you all. Some of these things I used to make but got out of the way of it and then just forgot about them. Chicken drumsticks is a great idea too - one I may save until in my braces come off in a few weeks! (Did I mention I was getting my braces off)?! ;)

My go-to easy lunch is avocado on toast. If I'm feeling adventurous I sprinkle sunflower seeds on top. Yum.

Wow, I'm jealous of the amount of variety some of you achieve! We're pretty strictly on a sunbutter-and-honey sandwich diet here, generally with carrot sticks and some type of fruit. We mix it up every now and then by putting the sunbutter on something else, like crackers or a waffle. Every now and then I sneak in peanut butter in place of the sunbutter or jelly in place of the honey, but both are met with complaints.

Other lunches that are tolerated now and then:
Yogurt (flavored sugary kind) with fruit and Graham crackers if we have them.
Pasta with butter and Parmesan
Mac & cheese
Leftover pepperoni pizza
Grilled cheese or quesadilla
Frozen peirogies, though we haven't had them in a while.

I usually have leftovers and A just gets random bits of this and that still.

It's like peanut butter but made from sunflower seeds. It's marketed as an allergy friendly alternative, but we just like the taste.

Yum! Whole Earth (edited as I called it the wrong thing) do a variety of seed and nut butter combinations. One is called Three Nut Butter and another has pumpkin seeds - they are delicious! Pretty sure there's a sunflower one too.
