half a tin of coconut milk? Got some left over from a thai green curry and no idea what else to use it for. Any ideas oh wise ones?

Saw somewhere very recently (on here or in a magazine, no idea which) that someone (no idea who!) adds the rest of the coconut milk from a Thai curry into jasmine rice to serve with it. Freeze it for another time. Make a spiced squash and coconut soup. Make coconut rice pudding. Make a smoothie with a banana and some mango (and whatever else is lingering in your fridge, that seems to be the general rule of thumb for making smoothies). Make coconut macaroons. Not those posh French macarons, the nobbly ones with dessicated coconut, pink food colouring, on rice paper.

It is great in lollies, rice, rice pudding, smoothies.

No, coconut ice is dessicated coconut and condensed milk, I think - so you could make that! But I was thinking of macaroons. My Mum used to make them. Probably in the Be-Ro cookbook, despite a distinct lack of flour. Basically a baked coconutty meringue. She'd dollop half on rice paper on baking trays then stir through some red food colouring. Pot luck as to the resulting shade of pink. Sometimes barely distinguishable from the white ones, sometimes the colour of '80s HubbaBubba. Aww, my lovely Mum and her Saturday baking. Good times x

That's a great shout oh returning wonder. Now I want to try that. Hurrah, a use for my cacao...when my hfm ulcer goes. Stupid babies getting better quickly and leaving me in pain.
