campfire meals

We're going for M's birthday to a little forest site. :D

Suggestions for campfire meals? We might borrow a mini camp stove in case the weather is crap, too.

Last year we made fajitas, pancakes (pre-made mix at home) and the obligatory BBQ and fry up type stuff. Previously we've made pasta, too. Any other good ideas?

Our nephew loves just melting chunks of cheese and wolfing them down. Not healthy but surprisingly delicious. Have fun.

Baked bananas in the ashes - wrap in foil in their skins and bury for 10 mins or so. Yummy.

Another vote for bananas - for an even more decadent treat, slit the skins on one side (which will then be the top) and add a couple of squares of chocolate first!

If you like jacket potatoes you can pre cook them and then finish them off wrapped in foil in the bottom of the fire. Yum! (you can cook them from scratch too it just takes a while!!)

Jambalaya. Bung everything in a pan and simmer until all water is gone. Delish!

Mince (as in mince and tatties) but with crusty bread.

I'm assuming that you use a pan on your campfire of course!

We love fried apples with (instant) oatmeal for breakfast. Sausages, instant soup, and chili and recipe are all on our regular list. If you do the bananas, we like them with peanut butter and chocolate chips...

Foil packets! You can take meat, fish, vegetables, whatever you want, mix them together, wrap in foil, sprinkle spices, throw in a square of butter, and snuggle them down in the coals to cook. And yes, baked apples too. Yummmm.

Duh, how did I forget about potatoes? And foil packets. Awesome, thanks guys. I might do fish with cubed/hasselback potatoes and veg... And those dampers look very cool, Nixxie. We'll be doing s'mores, too, obviously... :)

Our very favourite campfire meals when we were kids were things we could do ourselves in an old frying pan (but we were probably a bit older): eggy bread/french toast/fried bread with an egg cracked on top of it followed by bananas fried with butter and brown sugar until all sticky and caramelised. Not very grown up or sophisticated but very yummy! Oooh and dampers too.

The foil pouches and jacket potatoes sound great though!

Serve the mince (which should not have too much liquid in it) in rolls/baps/whatever you want to call them. An Orkney Mart classic. Yum.
