Christmas cake

Oh look, it's broadly a place to talk about special occasions, party tips and to swap present ideas but let's be perfectly honest, this forum is here because I want to get excited about CHRIIIIIISTMAS from about June onwards.

Christmas cake

I only have light brown sugar in & the recipe asks for dark brown. Will it be ok to use the light? Just a bit lighter in colour/less rich flavour maybe?

I'd say go for it, but I'm not a great baker! It may be a bit less sticky too?

I think so. If you wanted to, you could add a little golden syrup to enrich it a bit more.

Light brown sugar and dark brown sugar are the same thing - white sugar mixed with molasses, just more molasses in dark brown sugar. Shouldn't make much difference, as you say, slightly less intense flavour and a bit paler. Christmas cakes already - how are we already here?!
