I tried a recipe for halloumi burgers last night which was delicious but lacking in structural integrity. It was dead easy - just coarsely grate 200g of halloumi, a small courgette and a large carrot, and mix, with some chopped mint for seasoning. I added a beaten egg to try and make it stick together, but it was still very loose. In hindsight it would have been better to use gram flour instead of egg. Dry fry in a non-stick pan.
