Dried pulses

What do you do with yours?

I have a wide selection of dried beans and lentils, but usually do the same random-recipeless bean chilli, lentil soup or daal.

They are so cheap, and so good for you, there must be a million things you can use them in, but I don't know what!

Have out a bowl full of white beans (soy, pinto and haricot) in to soak, going to try a Spanish-style white bean soup tomorrow.

Any ideas gratefully received!

I usually end up with random lentil + veg curry thrown together in the crockpot. Tonight I've just made a lentil Bolognese for the first time in a whim, though, since we had nothing planned. It was happily eaten by both L and dh, and A had a lovely time smearing it around like paint on her highchair tray.

I haven't soaked beans for a while, but you can do the same with dried as you can with tinned, so maybe try:
Refried beans with tacos, tortillas, salsa, steak if you eat it, guacamole, etc
Boston beans/bbq beans on sour dough toast
Sausage and bean casserole
Bean burgers
Falafel. So many falafel recipes!
Bean dip
Ottolenghi probably has about seventeen thousand recipes for beans
I mash butter beans to serve with honey mustard salmon with lime
And I use chick peas in most curries as they bulk out and add protein and are really hard to overcook. Particularly good with cauliflower and spinach.

It's never occurred to me to make a lentil bolognese, I usually stick to dal (little bit addicted). Do you have a recipe, Treeb?

Original inspiration was from here, but I cheated and just sauteed some onion and finely chopped sweet potato with herbs until a bit soft, added lentils and water to cook until lentils were almost done, then dumped in a jar of sauce and cooked just a bit longer to meld flavors.

Lots of lovely ideas, thanks everyone!

I made a spectacularly tasteless white bean soup yesterday, wish me more luck with LL's idea of Boston Beans!
