Elderflower fritters

Post them up and every so often I'll snaffle them and put them on the blog, if that's okay? It'll save you the trouble of emailing them to me. (It will mean you lose out on our charming personal interaction but I sense you can live with that.)

Okay so this isn't really for babies - too sweet. But it's great fun for toddlers, both the foraging and the eating!

Pick a good bunch of elderflowers, nice and fresh and white. Check them over when you get home, discard any wilty ones, pick off insects and debris, and dismantle really big ones into 3 or 4 smaller bits, but keep a long stalk on each piece.

Beat together 4 tbsp plain flour, 2 tbsp oil, and 175ml fizzy water. Mix in 1 tbsp sugar. Leave for half an hour.

When you're ready to eat, beat an egg white and mix it in, then heat up a pan of oil. Hold each flower head by the stalk, dip the flowers into the batter, then hold in the oil till golden brown. Dust with sugar or drizzle with warm honey. Eat while warm, using the stems as handles.

Sounds dreamy! Now have to find somewhere to pick elderflowers...
