Post them up and every so often I'll snaffle them and put them on the blog, if that's okay? It'll save you the trouble of emailing them to me. (It will mean you lose out on our charming personal interaction but I sense you can live with that.)

I'm trying to be healthy, tone up and lose weight. I'm after some nice summer salad recipes which are also dairy free and veggie (or can be adapted to be without sacrificing too much).

Here are 3 I love:

Zesty quinoa salad- ... inoa-salad

Summer farro salad (used spelt and made better with chopped up gherkins and cherry tomatoes...)

Spicy chickpea salad (not that low fat but v healthy)

I anyone got any other ideas? Much appreciated!

I love a chickpea salad - the one I do is simpler - thinly sliced onion (red or spring), cumin, paprika, chopped chilli, chickpeas, red pepper (grilled or raw), chopped tomatoes, fresh coriander, lemon or lime juice and a glug of olive oil.

Also a tabbouleh with bulgar wheat, tomatoes, cucumber, lemon, olive oil, and lots of mint.

I adapt a Jamie Oliver side dish for braised fennel, roast tomatoes and garlic too into a salad. Still roast the tomatoes and garlic but add it to thinly sliced fennel instead of braising it in white wine - then dress with olive oil and white wine vinegar.

I know you said dairy free but I wouldn't miss a pea (or peashoot), mint and feta salad either.. Yum - I want a salad now.

I get asked for the recipe for all the time. I make it dairy free by just leaving out the feta.

This is one that we make all the time! We don't stick to the quantities in the recipe but here is how it says to do it...

Mexican-Style Bread Salad
2 large pittas
2 plum tomatoes
2 large avocados
tin of sweetcorn
tin of kidney beans

Dressing: juice of a lemon, 80ml olive oil, 2 cloves garlic (crushed), 2 tbsp. sweet chilli sauce.

Brush both sides of the pitta in oil; place on a baking tray and bake in a moderate oven for 15 min (or, as we do, stick 'em in the toaster)! Break them into pieces.
Chop up the tomatoes and avocados into large pieces. Combine these with the sweetcorn and kidney beans in a large bowl.
Just before serving add in the pitta pieces, lettuce and dressing.

It really is very good!
