no they need to be really ripe, almost mashy is best. otherwise all the starch is not sugar yet, it affects the sweetness and dough consistency in this recipe.

Here the method of making a sugar free banana bread is given.
* Set your oven temperature to 350 degrees F.
* Then mix flour, salt and baking soda in a bowl.
* Add vanilla, eggs, any sugar substitute and milk to flour mixture.
* Soften the butter or margarine in the microwave and add to the other ingredients.
* Now add the bananas last and mix it properly with other ingredients.
* And bake it for 55 to 60 minutes.

Had some relaly old 'nanas on the counter top today, so ripe they didnt need to be mashed, I just squeeeeezed them out!! Anyway, honey & choc chip 'nana loaf in the oven right now. :D

Saw Morlyte's photo on FB and had to try it out -- here's my version of Breebie's version with American measurements/ingredients:

1 c flour
1 1/4 t baking powder
1/4 t salt
1/2 t cinnamon
1/4 t cloves
6 T butter
2 eggs
3 mashed overripe bananas
(1 c chocolate chips :oops: )
(1/4 c brown sugar :oops: :oops: )

I used the standard (American, anyway) quick bread method (cream butter, then sugar, then eggs, then banana; mix dry ingredients separately and then slowly mix into wet ingredients, then fold in choc chips), and baked @ 350 in a parchment-lined loaf pan for ~80 minutes (I forgot to set the timer for the first 5 minutes or so :oops:). It's delish although it came out VERY moist and dense -- closer to a fudge cake than a quick bread, not that anyone's complaining. :D I might cut back to 2 or 2.5 bananas and/or add a touch more flour and baking powder. We're at altitude, so all this could very well be an artifact of that, too.

I have three more black bananas on my counter, so I might try the actual virtuous version next... :D

So, what do you spose would happen if I made this with a fermented banana? It's inflated like a balloon, completely liquid (as best I can tell) and sort of fizzing, so def. not just your garden variety overripe banana.

I know I should just throw it in the trash but I am a huge sucker for kitchen-counter science experiments (or, as my husband says, leaving s*** to rot on the counter and claiming it's on purpose). Maybe I should just drink it? :wink:

Dear me, today I made something really special...

from this simple banana recipe, I have created banana & chocolate brownie. OMG it is delish and I have eaten half of it already. :(

I just added some cocoa powder and a little extra butter along with chocolate chips. I obviously did something wrong with the mixing and when it came out of the oven it was very brownie like. Its divine!

I make mine for my Baby with no added fats either.

2 cups mashed banana
2 cups Self raising flour
2 eggs
1 teaspoon cinnamon
(milk to thin batter if needed)

12 muffin cases, baked at 220'c until tester is clean (10mins, but seems to vary with flour used, or ripeness of banana)

They are sturdy for little ones, maybe bit rubbery for adults but a lot easier for babies to manage as they don't crumble in grabby fists!!
