Banana and Oat Pancakes

Post them up and every so often I'll snaffle them and put them on the blog, if that's okay? It'll save you the trouble of emailing them to me. (It will mean you lose out on our charming personal interaction but I sense you can live with that.)

Banana and Oat Pancakes

These are delicious, quick, easy and most of all HEALTHY!!

Add the following into a blender.

1/2 cup of Rolled Oats
1/4 cup of liquid - Breast Milk, Formula, Rice Milk, water or fresh apple juice
1 Egg or Egg Replacement
1 Large Banana
Cinnamon to taste

Once all is in the blender, blend until mixture is nice and smooth and then cook in a hot pan.
Mixture makes around 6 small pancakes.

Thanks for this - made them for breakfast this morning and Mini B guzzled down three of them! They held together really well, but were also soft enough for him to eat easily. Am thinking of adding some other fruit to the next batch - maybe blueberries or raspberries...

Made our 2nd batch of these last night - gone down well with Wriggles, DH and me! (DH and me may have had a little sneaky bit of maple syrup with ours - yum!) Very easy to make. I've put some in the freezer so will let you know how they turn out.

I think the banana would make it go brown, but if you don't mind that then I guess it would be fine!

Anyone tried frozen bananas? They're great for bread, wonder how they'd be in this. I've got a ton...!

Made these on Sat and DS2 loved them. DS1 didnt like them at all which is ok as that means a portion will last a few days for DS2. I just had them in the fridge but will try freezing next time!

We've had some frozen ones now - worked great. Cooked, cooled, put in freezer, then defrosted overnight, 30 seconds in microwave and good as new!

We had these again today and I added some chopped raspberries to the mix before frying them (didn't blend them in, as I thought pieces of fruit would be nicer than pink pancakes). Tasted great - Mini B had 4 of them! DH and I had some maple syrup on ours too - even yummier.

mmmmmm these sound yummy, could they be eaten cold?? Am thinking they would make a very yummy lunch box idea

Currently a weekend treat here! I make batch on Sat and keep in fridge overnight. dS2 quite happy with them cold and the one I tried was quite nice too! Did think of taking out as snack so will maybe do bigger portion next time.

Ok, I may be being daft but does anyone know how cups relate to grams? I would love to try this recipe but I'm not sure how the weights will work. Thanks :)
