I adapted this from a couple of rice pudding recipes to be BLW friendly and this is probably my little man's most fav food at the mo!
50g pudding rice
600ml whole milk
few drops vanilla extract
bit of baby rice
Put rice, milk and vanilla in pan and bring to the boil. Cover and simmer for about 30 mins stirring occasionally. Take lid off and simmer till quite thick. Leave to cool, mixing occasionally to avoid skin forming and then mix in a bit of baby rice if needed to thicken it some more. Pour some more baby rice into a bowl. Roll desertspoons of rice pud in your hands to make little balls (very sticky!) and then drop into baby rice and roll about. Chill or place on baking paper and freeze. They actually seem a but better and less sticky if frozen and defrosted!
